A newbies perspective....

    Hi all!
    I'm a newbie here, and also to smoking ribs, brisket and a few other things. But I have been smoking butts for some time, just because I couldn't find a decent bbq sandwich. I did two butts yesterday and a friend came over this a.m. while I was finishing up and told me I had an unusual way of doing my pork, but it was some of the best she ever tasted. I've never had any instruction, just started doing it, but I guess that's not a bad thing. So, here's what I did, and really, I don't think it's all that different from what most of you guys do is it?

    First I don't marinate or season my butts before going on the smoker, I mean really, all that fat does a pretty good job of that, plus adding salt to meat that smokes for 8+ hours can dry it out, just my opinion.

    I put them in the foil pans and not on the grate, I add a pan of apple juice with several cloves of garlic to the bottom of the grill.

    I cook them to around 190-200 degrees, using a mix of hickory and pecan wood (cuz I have a bunch of pecan trees and it's free!)

    Pull them off, tent, but not tightly cover, with foil, and when cool enough stick them in the fridge.

    This a.m. shredded the meat, put in a large pot with a big helping of ghee and added some salt, pepper, garlic powder, hungarian paprika and warmed through.

    That's it. And it does taste great! The ghee really adds a nice touch too. I have used regular butter, but the clarified tastes soooo good.

    And a big thank you to all you guys for the great info on this site. You make it easy for a newbie like me to muster up the courage to smoke!

    You maybe make yours a little different than some but who cares as long as it comes out great thats all that matters. Everyone has their own little way of doing things. Like we always say on here there are no right or wrong ways to to BBQ as long as the end result is good you have done it right. Nice looking PP. I am not familiar ghee. I will have to do some searching to see what you are talking about exactly.

    Like rbranstner said everyone has there own little techniques... I am sure no Qer on this site does everything exactly the same as the other, but either way interesting style! Nicely Done!

    It looks to me like your way is just fine. As long as it turns out food you enjoy thats all that matters. Its nice to see people doing things a little different, thats what makes this hobby so fun and tasty. There are just so many possibilities(sp) and variations of doing things. Glad your having fun with it.

    I too like to keep things simple. I have been trying other rubs lately but I still like things simple when they are in the smoke.

    Yes I also say that everyone has their own little twist that they put into their smokes. Now you use this ghee stuff and I'm taking it to be a butter of some sort. Now my question for you is WHY did you take the butt out and then let it rest and THEN but into the refrig for cooling????? I just let it rest in a cooler and then dig into it after about and hours orso in the cooler. I don't know about you but when I do a butt for PP I want to eat it as fast as I can.

    I put it in the fridge because it was really late last night and I wanted to go to bed! LOL! I ate a couple of bites just to taste it, but it wasn't until this a.m. that I dug in to it!

    Yes, ghee is clarified butter and tastes wonderful!

    About the ghee - I make it and buy it. It's kinda pricey so when I get a wild hair I'll make it myself. I get heavy cream from a local dairy and make my own butter, then make the ghee. I could just drink that stuff. If you saw that burger I posted on my "roll call" newbie page, I ground my meat then mixed it with a little ghee and stuck it in the freezer before making the patties. They do flame up so you can't walk away, but the flavor is awesome. I'm like a mad scientist in the kitchen.

    That PP is right on. It don't matter what ya drive as long as you get from point a-b. I thought ghee was what 'rosco pico train" said. [​IMG] Nice job and [​IMG]
