Today I got my Christmas early, the wife bought me a Kingsford Sierra charcoal smoker and I can't wait to try it out.

I have been lurking on this site for a while and think it is great with wonderful people so I will be asking a lot of questions.

I have read on here that you need to season a smoker before you use it. I understand that you are suppose to wipe it down with cooking oil and light it to season it, is this correct? Also what all do I wipe with cooking oil, the cooker itself, do you do it inside and outside and what about the fire box do you do the same to it?

How will I know when it is seasoned, what temperature to I get it to and for how long?

I bought some Kingsford charcoal and some hickory wood today, it is my understanding that you get the charcoal hot then put some hickory on top (wet) of it for the taste, will I need to put the hickory in the fire box when I am seasoning it?

Final question, A person gave me a half of deer that I want to make smoked saugage from, where can I find some good recipes for this so I don't ruin it on my maiden voyage?

Forgot to introduce myself, sorry. My name is Wade Watts, I live just outside Columbia, SC in a small town called Elgin. I am a retired industrail mechanic, 67 years old, and I use to restore old cars. I remember as a kid helping my father kill hogs and we cured some meat and we smoked some of it, I want to get back to the days of smoking.

First off... welcome to SMF, glad you found us... I took an empty water bottle and filled it with vegetable oil, I then poked a little whole in the cap to make it a squirt bottle... squirt some on and wipe with a rag.. I did the whole unit (legs and all), inside and out and any wood as well... To season run it at about 250` with charcoal and add a couple of wood chunks to the fire every 30 minutes or so.. do this for about 4 hrs.. i then put another coat of veggy oil on after I was done.. Now your ready to go with your new addiction... Good Luck

First off welcome to SMF there Wade. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
