Well, I found a little 3.5 pound Butt at the local market so I decided to do some PP on the Kettle. It was pretty windy and I had a little trouble keeping the temps down but it turned out excellent. Just a couple of pics.


All slathered up in Jeff's rub.


I caught some nice light for this picture huh? At this point it is 167 so ready to foil. I will have to get a plated picture at supper time tonight. It wasn't quite done in time for dinner last night. This Butt was hacked to crap by some ametuer meat cutter. She fileted this thing like a fish to get the bone out. Luckily she did leave the fat cap on. It really turned out well though. This was about 6 hours in. It took 10 hours with a two hour rest. Pretty quick Butt for this guy.

That looks great. I'm going to have to try scoring the top of mine (they always look amazing when they are done like that)

Yes and I think you end up with more flavor as well. Kind of blooms like one of those deep fried onions. Thanks for the nice comment.

Thanks Bryce. It is. One of the reasons I didn't dig in last night was that I was out of vinegar for JJ's finishing sauce. I just can't live without that stuff for PP. The other reason was this.


I am ashamed to say there are none left today. Burp.

I've never made those before but look great. Nice job yesterday (despite the lack of ideal weather conditions!)
