I'm not a old time smoker yet that knows everything but i'm learning more everyday and working toward that goal.   This is the best bird I've cooked to date...I'd be happy to give you the bird but it went fast and  i already ate it all! .... lol, me and the dogs anyway.  


This was smoked on the chicken cooker of choice...WSM Mini letting the drippings go down to the fire and re flavor our once feathered friend. I used some  cut up apple tree branches and smoked about 350*  but went up towards 400* for a while. A little olive oil rubbed on the outside with some rubs gently rubbed under the skin as well.  Definitely sold on those high heat chix...  flavor out the yang yang.   Thanks for looking!

Hey evening Mikey....evening farmer!  Yes I'm getting old!   I still have a few hairs left on my head so i suppose there is always room to learn some new tricks on the smoker.   I wish you all could have tasted this run...dang it was good.     Maybe we can all meet in the middle one of these days and cook up some grub and  tell war stories.

Hey last time i checked Indiana is in between Pennsyltucky and Texas...ha ha.     Farmer you have the parts list.. get r done lol.    Pop the mini in the back, they definitely travel well. 

I'll smoke poultry, Mike you have beef.. being in Texas and all and farmer you get pork.   Sounds like a plan to me.  
 
I have. 3500 diesel. Uds will fit in the back.

Pork is good for me.

Evening Mr Mule!  Long time no see.  Thanks... nothing like a little  smoked juicy bird.   I've been mixing things up with beef, chix and pork but just worked my back to yard bird in the rotation.   Now I'm thinking sea food needs to be worked into the equation.   Crab legs maybe?
 
Snow crab. I have wanted to try snow crab legs.
I miss Oysters out of the Hood Canal out in Washinton... waiting for them to pop open cooked over a smokey grill and dipping them in a garlic and butter sauce.   oh baby i'm getting hungry!

Yea i'm not sure if any of our rivers indirectly come in contact with the Mississippi or not.
