It's a 19.54 lb of chuck roll @ $2.45 with a simple rub nothin fancy salt pepper cumin chili powder corriander of course garlic. Using three probes one at each end and one for the rack. Hick is the flavor of the day. The target temp is 250 with an internal of 205. Enchiladas, tacos and sammies are the future meals. Didn't start when I wanted to but no harm no foul.
