A hot wing smoke for Smoking B

Just after I joined SMF Smoking B and I were smoking neck and neck everyday. One day Jeremy PM'd me and asked if I wanted some Habaneros. A few days later a package arrived with Habneros and Habanero dust! One of my favorite things to make with the Habaneros is Acid Rain, aka Fire water. I make a bottle every couple of weeks and use it as a condiment on all kinds of things. Quite sometime back I was going to inject a batch of wings with it and never got around to it. So here they are Acid Rain wings. I also did a cooler batch injected with soy, ginger, and garlic. Dusted the acid rain wings with chipotle powder, habanero dust, garlic, salt and pepper.




Crisped them up with some direct grilling on the mini-wsm

Niceeeeeee......good color on those babies. Those drummies are big...almost look like legs. I still can't believe the price of wings now, saw them for $2.50 a pound the other day....gonna be a special occasion treat pretty soon. I have some uber hot chili starts for the garden....will have to make some of that Acid Rain later in the year.

Thanks Willie! Yeah I've been buying them when they are on sale. I really like the whole wing, but they are hard to find. These were parts and pieces frozen in a 4# bag from Safeway, got them on sale for $8.99 a while back. The fiancee picked up 8 differnet varieties of peppers this year. If it ever stops freezing at night we'll see if we can get them planted! Starting our seeds tonight, hopefully be able to plant in 4 weeks or so.
 
Sounds like they have nice bite! Also hope Smoking B is recovering.

As a newbie, can i ask how you keep the wings from getting leathery during the smoke?
I am wanting to do some frank's injected wings with a little yardbird rub on them. Nit trying to hijack your thread, but those look perfect so i thought i would just ask "how'd ya do that??"

Inected wings are great. Mix your Frank's with some creole butter then inject. I like to marinate a whole day or overnight when I can. High heat is the trick to getting the crisp skin. I smoked these for an hour at 250*. Then at the end I put them directly on the grill to crisp them up. Chicken doesn't need a low slow smoke to get enough smokey flavor. If you can crank your smoker up to 275*-325* and you'll get a good crisp skin. Other wise do like I did in this smoke and finish them on the grill. I was testing some heat management techniques last night that's why I smoked at a lower temp. Normally I do my chicken at 275*-325*. A good dry rub for wings is garlic, salt, pepper, & chipotle powder. I try and avoid rubs with sugar.  Post some Q-view when you get them cooked.

Sorry, I was warned not to use "BearView" any more, and I said I wouldn't.

Seems those from above thought BearView was meant to take the place of Qview.

Had they actually paid attention, they would have known a "BearView" was no more than a Closeup of a Qview.

So I told them I wouldn't use it anymore.

Hey thanks guys for all of the help! I will get pics of my wings when i do them. I'm also going to do a bacon grenade so it will be a fun smoke!

Sure go for it!!! Let us know how it turns out! Should be smokin good! When you eat the wings it's one of those heats that's there, and the more you eat it builds!
