Looks great but just an FYI for the brisket to be the tenderest you should always cut a brisket across the grain.
I just came back from the all-you-can-eat Chinese buffet and you still made me drool .
oooolala 11.5 hours eeff scarfed down a bunch of bark oh man almost like sweet spicey jerkey ohhh and a bunch of nuggets as I was pullin it --- to tired will post a nice cheesy sub tomorrow

Hi Div,turned out real good,now go get some sleep.
Did a 15.5 lb brisket last weekend to 210 degrees thought it to mushy for my taste. Fell asleep, but is was still used. aaaah consumed!
