6 pints of spicy Asparagus canned

    We stumbled upon a great deal on asparagus this weekend, so we whipped up a batch of spicy asparagus. Base recipe is pretty simple:

    4 cups cider vinegar

    1 cup water

    1/4 cup of salt. I use pickling salt

    2 Tbl sugar

    We did this and a half batch to get enough for the 6 jars (this recipe is good for 4 pints). Mix all together and heat to dissolve the salt and sugar.

    In the jars we add 2 cloves garlic, 2 Thai Chiles, fresh dill, a pearl onion, whole pepper corns and celery seed. Fill with asparagus, pack tight and leave 1" headroom in jar. Pour hot liquid into jars, once again leave 1" headroom. Water bath for 15 mins.



    The Mutley crew piled in the car to help dad get some more canning lids! The little one uses the big brothers as booster seats...

    Thanks Dave, here in a few weeks we'll give them a try! We love spicy pickled things! We do cauliflower sometimes too! Is really good also!

    That really looks good!  The pooches are a hoot!

    Question for ya...do the spears stay crunchy that way? Have had some that was "mushy"...didnt like that.  Wondering if these would have the pickle crunch to them.

    I've had mixed results. We'll find out in a couple weeks when we crack open a jar. The asparagus was less than ideal already so there is a possibility it may turn out on the mushy side.

    Okay the results are in!!! I stored these out in the garage and totally forgot about them until the other day. They turned out fantastic!!!! Wish I had bought triple the amount of asparagus. Thinking I may try this on some carrots soon. The asparagus wasn't the best when I bought it and I was worried that it would turn out mushy. So far very crisp and the flavor is spot on! Could use a tad bit more heat for me, but others say its super spicy.

    Great to know....I do not care for "canned" asparagus. (by canned ones...I mean commercially canned)  Hate for it to be mushy.  Love mine still raw with some Alabama White Sauce!

    We have pickled asparagus and it seems they take at least 6 months in the jar to get crisp and delish...   Bloody Mary condiment for sure...   Probably good on a salad but they never make it there.....

    Going to have to give this a try. Had gotten some asparagus on sale Sun. for $2.29/lb. and it was very fresh (made him pull from in back). Maybe add some Vidalia sweet onion and a tad of pickling spice???

    I'm sure you can add just about anything to the mix, veggie and spice wise. For us the flavoring is great, but could use a bit more heat. I love pickled onions!

    sounds good....glad it turned out. I still have a few jars left in the outside fridge.....Dave mentioned 6 months, maybe I'll let it ride and see about the crispness. Liking the Muttley Crew...lol.....seems I havta  take the Lab for a ride every day or he gets his feelings hurt....lol

    Yeah they like to go for rides. They prefer the truck to the Kia. Unfortunately the Kia gets better mileage!!!
