So this is my first Prime Rib smoke and I have to give a big thanks to Bearcarver for his how to.

So got this thing back at Easter time when on sale, picked up an 8.6 lbs Prime Rib and stuck it in the freezer as soon as I got home. (was in the middle of moving)

So pulled it out on Wednesday to thaw, then on Thursday put a good coating of Worcestershire Sauce on the Prime Rib after scoring the fat cap, then put a good covering of

Cracker Boy Seasoning on ( mainly salt, pepper, garlic, and onion powder), I have to order this seasoning but will highly recommend it to anyone as it is just the right mixture of the basics.

Then wrapped nice and tight in cling wrap and back in fridge for a 24 hr sit.

So this am, got up and prepped the mac and cheese, and baked beans to go on the other smoker, soaked some apple chunks to go into smoker #1 for the Prime Rib, and some Pecan to go in with the side dishes. At 11;30  the masterbuilt pro was holding steady a 230 and the prime rib went on.  Then at 2:00 fired up the Master Forge to 250 to stick the sides in to.

Here it is at 2:30 and the prime rib is sitting at an IT of 106 and the sides have just gone on.

The Prime Rib is looking great so far, can not wait to dig in.

And here it is at 2:00 PM with an IT of about 103.

So at 4:10 it hit an IT of 138, so I pulled it off the smoker double wrapped it in aluminium foil and turned the smoker off, stuck the Prime Rib

back into the smoker. Sorry forgot to grab a photo before I wrapped. But it looked wonderful.... Both the smoker and the prime rib are holding

steady at 140, gonna let it rest until 5:00 and then I will pull out and slice, and serve up with a side of Smoked Mac and Cheese, and Wicked Baked Beans.
