heres the meat that i will be using tomorrow...3 pork shoulders, 21 pounds total...and 2 racks of pork loin back ribs...3 a.m is gonna come early...

the big shoulder is cut up into 2 shoulders

i rubbed the pork shoulders down with mustard before i put the rub on, and the flash from the camera brought out the yellow from the mustard...

Looks like there's going to be some great eating down fla. way on the forth.
 
the smallest one was at 145 at 830...foiled it...ive been doin pretty good at keeping my temp around 250 so...using apple wood, with some hickory
