I have a smoke hollow gas smoker 36" tall 16.5 wide and 13.5 deep couple of questions I am smoking 40lbs of pork butt 4 @10 lbs each wondering if there is a certain way I should place them in my smoker I.e bottom middle or top rack?
Spread the meat around so you get good convection. Go by the average temp at the middle rack. Top or bottom may be hotter and you can swap top to bottom every 4 hours or so for even cooking, if needed...JJ
