That's right. This is my first entrance on to the forum. My name is Tom and, as my username suggests, I am a butcher by trade. I am a meat dept. manager for the biggest supermarket chain up here in the northeast. I live in Scituate RI which is about 15 minutes northwest of Providence. I purchased a Charbroil Silversmoker about 4 years ago and have been smoking ever since. Learned all I know from this web site and through trial and error (when it comes to smoking). Already knew about the meat! Anyways, just wanted to say hello and introduce myself!

Welcome to the forum, Tom! I was a meat dep't manager, deli/bakery and meat department supervisor for almost 30 years too a bit north of you in upstate NY. It's a great trade and profession, and an art. From one meatman to another, welcome!

We've had folks that have lurked for awhile then join, but sign up and post 4 years later-well as my dad would say "That there is a man of few words-very few!!"

I've got a background in meat processing meself-Dad owned a meat packing plant and I did everything from slaughtering to cutting to curing and smoking. Don't much of it anymore but I'm glad I learned.
