I bought a whole ribeye a while ago. It was a cheaper no roll, it was only $3.88 / lb. I've had real good luck with the thin sliced "sandwich" cuts.
Thought I'd cook this big boy up on the MES 30".
I brushed it with EVOO and then rubbed with a prime rib rub I make up.
In the water pan I put in beef broth and chopped white onion.
I seared it on my gas grill on the infrared searing burner.
Here it is at 145 degrees after pulling out of the MES.
I sliced it up, put it on the grill. Cooked my wife's piece for a while cuz she likes it more done. Cooked the other pieces just real quick to get them heated up, and sprinkled some more rub on the inside pieces.
It turned out pretty darn good. For $3.88 / lb, it turned out REAL good. Maybe even a little more fatty then the already fatty ribeye, but for the price, I can't really complain.
