Wanted to celebrate the beautiful working from home day, so I have some canadian bacon on the smoker, and a spare rib slab.

I halved the loin into 2lb pieces, and cured with TQ, along with some pepper. Sat in the fridge 7 days, then rinsed, and soaked for 2 hours. Rubbed down with coarse black pepper and rosemary. Will smoke with maple chips at 225.

More pics to come.

Nice Martin, enjoy your day at home.

Sorry buddy I couldn't resist. Everything looks great so far.

Great looking smoke there Martin. You have to love that canadian bacon and yours looks great and yummo to boot. Now how are the ribs I didn't see them yet. Then you are working too. Man oh Man making money and smoking. Pure Heaven.

Thanks. I took them out when they hit 155. They were amazing - my family tells me they're way better than the ones they get from the Polish deli, which actually prides itself on its homemade smoked meats. Family tells me the smoke flavor is missing from the store bought stuff.
