Hey guys! New smoker here and I am already in love. I have been hard at work and smoking meat pretty much everyday and I am having a blast. Today I decided to join in on the forums as I have been lurking and learning a lot. Doing 3 kinds of ribs today.

Rack 1
Brown sugar, CBP, garlic powder, salt, chili powder, cayenne, red pepper flakes, and a little bit of cumin.

Rack 2

Just salt and pepper (tried this the first day I got the smoker and loved em).

Rack 3

White sugar, salt, and Montreal steak seasoning (not sure how this one will turn out but interested)

Doing them in my MES 30" for about 5 hours at 260 or so. Mix of hickory and apple as I found for me the hickory is pretty strong and the apple didn't seem strong enough. Gonna probably follow the 2-2-1 method I have seen on here but I want the brown sugar rack to have a nice bark so I'm concerned what wrapping will do to the bark. Oh and a sprits of apple juice, cider vinegar, Jim beam, and water mix every hour or so. Here are some pics.

Top set is the rack 1, middle is rack 2, and bottom is rack 3.

I have never done this many racks and I am surprised that the smoker is taking a while to get back up to 260. Will post updates as u go.

I would forget the spritzing.

Every time you open the door, it will take a while for the smoker to get back to temp.

Your just prolonging the cooking time.

What kind of ribs....Also if you don't wanna keep opening the door to spritz, at least keep a water pan to have some kind of moisture going on to keep moist. The foiling I do after 2 hours unwrapped always makes it nice n bark but not to much...I do slabs of butter, brown sugar and honey with the meat side down on it.....

I made 5 racks yesterday in my weber smokey mountain and couldn't or didn't spritz at all during the 4.5 hour smoke, cause my mother in law is allergic to anything apple or vinegar so no point of just spraying water mist so just didn't spritz, and kept my water pan full.
