Beef Ribs were on special last week so I couldn't resist and snapped up a couple of packs. Didn't really do to much to em....just SPOG'd em overnight then did the 3-2-1 method @ 225F with red wine & orange juice. So i fired up my new MES30 and the 12" AMNTS with pecan and went about it.....

These were the best beef ribs I've made so far. Tender, juicy and flavourful!. I got say that i'm pretty impressed with the MES30....I had read some  pretty ugly reviews...Maybe I got lucky with this unit, but the thermometer is only a couple of degrees out...makes good smoke using the chip tray or the AMNTS. I've done 4 smokes in it so far and all have turned out great.

Thanks....honored to have a member of your stature comment! Dont fear my smoking friend.....cold smoking some Filetto (cured pork tenderloin) for 3 days. i keep my smokers busy.

 Thanks....The Filetto are getting a 2nd smoke today and then will hang in my chamber until around 40% weightloss. Usually takes 2-3 weeks....so stay tuned.

Re the iGrill2...I'm very happy with it. Works exactly as advertised..no hassle to set up and use. The smartphone app is also very convenient. The base unit comes with two meat probes..at the least make sure you get the ambient probe also.
 
Tasty looking ribs! Glad your iGrill2 is performing good. I just got mine in the mail and haven't got to use it yet. I did test the probes in boiling water and they were spot on so that's a good sign. Especially since I sent my iGrill to my cousin!
