    Hey all,
I had 10lbs of ribs, in the freezer, I caught on sale in August. Thought I do 'em up for dinner tonight and use Jeff's Rib Rub - for the first time on ribs, for me anyway.

Wife liked them so well she had to stop herself from eating any more for fear of getting to full!

Here is some Q-view for y'all:

    Just in the smoker

At the 3 hour mark, just getting ready to spritz foil

After removing from foil, spritzing again and going in oven for 1 hour to firm up.

Those ribs look good. How did you manage to keep them in the freezer since August?

I had 350 lbs of other meat to smoke first!

Seriously, I have a contact that is in food sales/supply for a major restsurant supply company, and he gets me Prime meats for dirt cheap pricing. So I make large orders from him for me, close friends and family. I have so much other stuff to choose from for smoking, that the ribs got pushed back.

I never liked ribs at restaurants and am just learning that I actually love ribs, when done right!

Why didn't you just stick them back in the smoker to firm up instead of the oven??

    They look great though [IMG]

It was easier for me to pull them from the smoker after the 3 hours and finish the rest of the 2-1 in the oven. My smoker is kinda small and once you open the door to wrap with foil, you loose all your heat. So I usually pre heat the oven for this part, that way I can pull & foil them in about 1 minute and have them back in a heated environment right away.
