Hello! First go around at smoking ribs last weekend I learned a lot about my Weber Kettle and intend to put that knowledge to use today with my second try at smoking some loin back ribs. Last Saturday when cooking the ribs I used a foil pan under the meat as a drip pan and also filled it with hot water to use as a heat sink. I was using the snake or ring of fire method with the charcoal and used way to few briquettes in the ring. The ring was 2x1 halfway around with only 8 or so to start the fuse. The water in the pan kept the temp stable but with me being a n00b and the small amount of charcoal in the ring even with the vents wide open it took me about 2 hours to get the temp up to 225.
