Last batch of sticks for 2014.

These are sweet Amish style, 5 lbs. You can use any mix for this, just add the amount of honey you like. AC Legg #116 is a good mix. No binder or AP needed.  AP= Ames Phose

Amish sweet sticks are popular in the PA Amish Lancaster county area.

Nepas, how much honey did you add and what was the level of sweetness still in the finished product? Sweet and spicy snack sticks sounds good and I just happen to have some stick casings.
Used 5oz honey. They just went into smoker. Made these before and went fast.
 
Rick, morning..... I keep reading your post's and it seems to me, most of the stuff you make is for your kids....

Now, me being 66 years young, am I too old for you to adopt ???? I won't cause much trouble being 2500 miles to the West... I've even got room for your motorhome...

These sticks are for my yankee grandkids that are moving to GA.
 
Sticks are looking good Rick..... Ive been under the weather for the past few weeks for making anything.............. Everyone is keeping me afloat with their q-veiw
 
Well here is the sweet sticks done. Did a 5 hour cold smoke after they bloomed, should give a slight tang with the sweet.

After years of using a Bradley smoker the MES has a slight learning curve. I found that even with a 1200w element the MES runs about 10* cooler and the vent cant be full open, Chocked the vent to half and the heat ran pretty good.

It was cold today with a high of 43 so that may have been a factor also. The window on the door i'm going to let get gunky, may add some insulation to it  HA

Into a paper bag with these and fridge for a couple days.
