2 Rib Rack in the smoker.. AMNPS generating smoke....

I was grabbing Bride some stuff from the freezer and there was this rib roast.... All wrapped up nice in plastic and freezer paper and vac-packed staring at me.... No longer.....
Since I was up at midnight, for some unknown reason, I started the roast....
Seasoned with Montreal and Kosher Salt....
Preheated the smoker to 275 for 2 hours to do a sterilize to it and dried a mix of Pitmasters Choice and Hickory during the "sterilize".....
Slid the roast into the MES 30 and turned the heat down to 140 ish... The roast will dry and form a pellicle while the temp drifts downward...
Pulled the AMNPS out, it had 1 1/2 rows of pellets... I wanted about a 5 hour smoke...... They sure light easily when hot and dry....
After about an hour, the roast was dry to the touch.... Lit the pellets and into the MB mod.....
5 hours at 140 and upped the temp to 180 ish to start the cook.... after about 4 more hours the meat was done... 128 IT.... turned off the electricity and let the meat sit in the smoker for another hour... temp in the meat drifted up to 132.... Pulled it and set it in the beer refer, uncovered, until time to slice..





 
mmmmm smoked beef sandwiches. Perfect I T for me ya have to kick it up another 20 or so degrees for the wife................

I wish I had been cooking rib racks like this the last 40 years.... Straight cooking in the oven doesn't come close to great flavor....
