Just got 2 corned beef flats on discount and wanted to make a first attempt pastrami. I've read alot on the forums and around the net and wanted to see if there was anything else tasty besides corned beef or brisket to do with these. Wanting to do a full Q-view on whatever it is so that's why I was thinking pastrami.

Follow the pastrami recipe on AmazingRibs.com. I tried it and it came out great! I used apple to smoke it most of the way and then finished in a 225 oven. After the smoke, stick it in the fridge for a couple of days and then steam it as suggested before serving. You won't regret it!
