Baby Backs were on sale at my local grocery store so I grabbed some and decided to smoke a rack on the AKORN yesterday. I planned on using the 2-2-1 method but actually went with a 2-1.5-.5 and they still came out to fall off the bone for me. I mean there was ZERO pull, the meat fell off even while i was cutting them. My temps were a bit higher than normal and i actually had to fight the smoker the entire time. It was a very frustrating cook to say the least, temps were 225-255 and went up and down as I chased it the whole time.

I rubbed them down the night before, spritz them at the beginning, one hour, before foiling and actually did something pretty neat. While the ribs were in the foil I poured the last of Jeff's Sauce i made into my small cast iron pan and reheated it in the smoker before putting it on the ribs. The flavor was out of this world! 

Besides chasing the temps and the ribs being waaayyy to fatty (that's what I get for going cheap I guess) it was a good smoke that tasty awesome in the end!

They look awesome. Nice job on this BBs if they are too FOTB for you go no foil and you can just use a toothpick or some sort of probe to check for tenderness when it goes in like a hot knife in butter they are done. not quite FOTB but very tender. I have seen those Akorns at wal mart they seem to seal up pretty good.... could have been flare ups if you didnt have something between the meat and coals to catch drippings... or maybe the kind of charcoal you were using?

They look good, just overdone. I have stopped using foil and my ribs have returned to the way I like them, with just a little tug I have noticed lots of folks getting away from foil in the last year or so. I cook my ribs at 250* and they are usually done in about 3 hours and ready for about 30 minutes with glaze. Good luck and keep smoking, Joe.
 
I will def try no foil next time. he sell a "smoke diffuser" for these for 40 something bucks. All it is is a ceramic plate that fits on the tabs above the coals. I used an old weber grate to sit on the tabs and then a pizza stone on that. same principal but this setup was free!
 
I have yet to perfect my ribs.  Cant get them FOTB.  Will try again next weekend perhaps.  Well done on the Q View!
