So I put together my mailbox mod in about an hour. I had all the pieces, just didn't have time until this week. Everything fit like a glove, and I tested them out on 2 pork butts today. Butts were originally about 7 lbs apiece, but I sliced off the fatty side to make bacon, later.

One got my usual pork rub, the other, Tatonka dust. I still like that better than mine. I guess I need to get to work developing a better pork rub.

Started up the smoker about 6:15am, and got the meat in by 7.




Pitmaster's Choice pellets in the AMNPS, with a little crushed charcoal briquette underneath.





Nice TBS, and no leaks anywhere. The AMNPS burned through with no problems at all.


Mopped with apple juice about the 4 hour mark.


Had to foil at 165° at about the 10 hour point in order to get done today. Still took over 13 hours, and 2 more in the cooler.


And pulled. Now I can get some sleep.

Nice work on the modification, looks like it worked out well for you and glad to see your still enjoying the Tatonka Dust seasoning!
