Hi all. My name is Matt. My wife and children got me a 36" vertical propane(Cabelas brand) smoker for Christmas. I've never smoked anything before but I've been doing a lot of reading here and at other sites and am finally ready to take the plunge. I have 2 whole chickens in brine as we speak and am looking forward to a nice dinner. This site and all of you experts have been a blessing. Thanks, and wish me luck.

Welcome Mat,

I've been thinking about getting the cabela. The reviews are very good. Let us know what you do and how it comes out.

Trying to figure out how to add pics.

...Sweet!!..New toys!..
... Being new to 'Smokey' side of things too... I can tell you one thing, Matt...You hit the nail on the head with your expert comment!...I have found the knowledge and info of this group to be spot on!..
...Good luck with the chickens...

Welcome to SMF, Matt! Before you put those birds in the smoke be sure to season your smoker. That will burn off any gunk that may still be on the surfaces from the manufacturing process. That way you won't end up with chicken that tastes like weird chemicals.

Welcome to SMF, Matt! Glad to have you with us. Terry gave you some good advice as it is very important to season your smoker prior to its first use. Just throw in a few chunks of your favorite wood and run her up as hot as she'll go for about an hour or so and you'll be off to the races...

Good luck!

Cheers,
Brian
