Used the Okalhoma Joe smoker today and man i definitely don't need another beer.  Spent a lot of time maintaining the heat.  I will definitely have to hurry and make some mods to this thing.  Smoked up a 7 lb sirloin tip roast with a store boughten rub.  All of the work was well worth it.  If you have any hints on mods that need to be made to this smoker please let em know.  All in all everything turned out fine.  As they say practice makes perfect!

In the search bar where it says "Search Forums, Articles, Reviews and More!" put in Oklahoma Joe Mods and it should pull up some for you!
 
Congrats on the meal!  I found that a smaller, hotter fire made for a better smoke on the small offset.   Maybe begin with a layer of charcoal and then add small chunks or splits of wood as needed.  Allow it to form a nice bed of coals and keep a good eye on the dampers.

Good luck,  when you learn to master a small offset you have mastered the craft!
