I bought a rack of pork spare ribs on last week. If I can figure out the q-view then I'll post my results next time. After thawing out the ribs, I rubbed half with Tony Chacheres and the other half with some Saltgrass Seven seasoning. I used the 2-2-1 method while smoking at a temp of 250 deg with hickory chunks. After 2hrs I wrapped them in foil and added Sweet Baby Rays Honey BBQ sauce. After the 5hrs were up I wanted to foil them and put them in a cooler for a while but due to time constraints I didn't have time. They turned out really good. I didn't think they would be real tender since I was running out of time but they were w/out falling off the bone. I will definetly do ribs again.
