1st time smoking sausage

  1. i smoked italian sausage for the first time today. 250 degrees for 3 hours with a hot&sweet rub. came out great with an internal temperature of 180 degrees.i use a Masterbuilt electric smoker and i used a mixture of mesquite and alder chips. mouth watering good.

    Those look tasty!! How did you get the rub to stick to the sausages? I usually find that rubs don't stick to sausage very well.

  4. after i take them out of the packaging i put them in a tupperware container in the refrigerator for a couple hours before i apply the rub. they get moist and the rub sticks well. then i let them get room temperature before i put them on the smoker.

    I never considered putting a rub on sausage, always assumed the spices inside would be adequate. Shows what happens when you assume, and gives me something new to try!

    Nice!! I'm definitely going to try that next time I pick up some sausages.
