Hey group... You all have been very helpful and informative in the past, so I thought I'd ask this question. I am smoking a turkey today (basically as an experiment, they hand out free turkeys at work, and my in-laws already have a family dinner bird). It's just over 13 lbs. I brined it, and am going to apply a dry rub before I start to smoke it. First off, I have NEVER cooked a turkey myself before. What can I do with the neck and giblets? Thanks!
