im in the process of smoking ribs for the first time with a master forge charcoal smoker.
Its the same one used in this video:
and pretty much the same as this picture
I thought I should do the minion method to slow cook my ribs for 6-7 hours.
My problem is that I cant get the temp over 200F.
this thing doesn't come with any vents. it has a hole in the bottom under the charcoal area and that's it. I want to change the charcoal area to a rack to avoid smothering but im wondering if I should add a vent. Iv seen people add them to the top of the lid but theres no flat spot on the lid so im thinking it would just leak all the time. Also, should I add a vent like thing to the hole on the bottom to control the intake?
What do you guys think? im on the 3rd hour of my first smoke so I don't know what im doing.
