Good Morning,

Yesterday (12-20-09), I smoked my first rack of pork spare ribs along with 5 lbs. of bologna, 12 ABT's, Baked Beans & 2 large stuffed mushrooms. I smoked the ribs for about 7 hours and the bologna for about 4-1/2. This is only my 2nd smoke ever and my 1st smoke in my new GOSM and I feel it turned out pretty dang good. The ribs were amazing!!! I used a rub recipe I found here in SMF called "The Best Rib Rub Recipe" and it was great. I think I will add some brown sugar to it next time tho. You might want to size your pics down a little they took a while to load on my system and I have the fastest Roadrunner Service Available, Roadrunner Turbo, so the ones with Dial Up will take forever... Just a thought...
 
No way! A great thread with great qview can never be to big in my opinion. You've just made me hungry.

I'll say it was a nice way to break in the new smoker. Everything looks great.

Good looking stuff. You'll love the addition of brown sugar. I use a spicy rub and then pack brown sugar over the top of it. The brown sugar will start to melt into the rub before it even gets into the smoker and it makes an excellent glaze.
 
If you notice the bottom right hand corner of the bologna picture you will see a piece of bologna with a bite missing. That was ONE of my snacks.

Nice looking smoke! I keep telling myself to try some mushrooms and now seeing yours I'm gonna to do it this week!! What did you stuff them with? Thanks.
 
I just used the filling I used for my ABT's...cream cheese, monterey jack cheese and garlic powder. My wife loved them and wants me to make more this weekend.
