Here is a pic of my first smoker. Everyone has told me that it won't work. I got the plans for it off the internet.  So far I have smoked a beef brisket, Turkey legs, 3 batches of deer sticks, and two batches of venison jerky.  So far everything has worked  out perfectly. I have experimented with many temperature ranges and was able to maintain a temp from as low as 80 degrees to as high as 350 degrees.  I use a propane turkey fryer burner with a control knob, a large cast iron frying pan filled with wood chips. I love it and it works great

Great looking smoker but looks like a smoke shack. A UDS "ugly drum smoker" is  55 gallon drum smoker. Your's ain't that ugly.
 
how long do the chips in your pan last before you have to add more?

what are your normal outside temps?
 
I fill the pan about half full of shredded chips from a local fleet supply. That lasts about 1 and half to 2 hours depending on how high I'm smoking. A bag of chips will last me for a 12 hour smoke.

I haven't smoked in real cold weather yet, the lowest was about 30. Although at 30 it didn't have any trouble maintaining temp. I will be smoking here in a couple weeks and have to think it will be in the teens. I will post with the results.

 3 thumbs up now you have to get it dirt so you better start smoking. You sure are off to a great start with all that you have smoking now.

thanks for the info.  i ask because I am in the process of my own custom build.  I am going to put two hot plates in the smoke generation chamber on timers so that I can have them run independently.  first one for 2-4 hours (depending on how long the smoke lasts in testing) and then the second one for 2-4 hours. that way I can have my jerky smoking while I am at work.  the main chamber will have its own temp controlled heat source. 

any thoughts?
