I have an MES30 and an A-Maze Smoker. I am doing BBRs. They have been in the smoker for 2 1/2 hours. I see no pull back. I have a Redi-Chek thermometer set but the instructions are way over my head. All I want is an accurate temperature read out. Should I keep my ribs at 235F until I see pull back or does that happen in the course of foiling etc.?

Smoked long enough, now foil for anther 2 hours ans then finish for 1 hour out of the foil

What Todd said.  On most ribs there is too little meat to get a good temp reading anyway.  Most cook them to the bend test.  Pick them up at one end with tongs, and they should bend readily.  A 2-2-1 should put you in good shape on those unless they are extra meaty ones.

Most of the pullback will happen in the foil. How did they turn out?
