Hey guys been messing with this here machine and think I figured out how to finall do this. Last week I went salmon fishing with the family out of Manistee on a great charter with an ex-cop captain, great time and if the radio calls to other charter captains were any indication we had the most boated fish. In all we got 6 kings and 1 laker. Of course I came to SMF for the know how to smoke these babies up
I also made some of Dutch's bean. a;ways a hit at the phodog house. also smoked some cherries for coyote's smoked cherries and bourbon lemonade. Then finished the fish

and the smoked cherry toddy.

This site is great and all you selfless and knowledgeable guys ROCK. Thanks a ton.

Hey Phodog:

Greetings from Northern Indiana. You have some great looking salmon going there. I went out on Lake Michigan over Mermorial Day. Limited out but no big Kings. Nothing better than fresh salmon.

Here is my favorite marinade for salmon:
2-3 limes
1/3 cup tequila
1/4 cup olive oil
2 jalapeno peppers, seeded
2 teaspoons sugar
2 teaspoons chili powder
1/2 teaspoon salt

Mix together and marinade salmon for two - four hours. After marinading the salmon, bring the remaining marinade to a boil on a sauce pan and use as a great finishing sauce. It has a great kick.

Thanks Blues Man, I'm going out on Lake Michigan on the 4th and 5th of August I'll Give your marinade a try, Looks good...
 
Please note on the Tequila marinade I posted earlier:
