1st real Smoke for my WSM 18.5 Pork Shoulder

Could not pass on this piece 10.5 pound pork Shoulder picnik $0.80 yes thats right 80 cents a pound.Now the weather even went in my favor started off the day, in the mid 40s.

I brined the meat over night simple brine water,salt,sugar,black pepper corns,garlic. This was boiled then cooled to 42* F

Used the charcoal basket from my Jumbo Joe 3 chunks of Cherry


Rinsed while waiting for the temp to come up


Temp went up to 275* so time for the meat to meet the heat


Temp dropped to just below 250* you can see I also replaced the temp. gauge

Now the boring part hrs of seeing that gauge LOL 

Nah couldn't do that to you nice people

So after 9 hrs here it is

Rested for 30 min.

John Thank you I know I am going to enjoy using this,I do miss my mini but the temp gauge was saved, and I took the heat deflector out it looks like I can use it instead of the Water pan.Thanks for the point I appreciate it
