1st overnight brisket

  1. Having the family over on Sunday for burgers ans sausage. I figured I would try a brisket too. My first full one. Picked up an 11 pounder and put it on about 6 hours ago. So far so good.
    Picked up a maverick

    My view most of the night
    Almost wrapping time.

  3. Yep. I just wrapped it up at 171. Now trying to get smoker temp under control again. Went up a lot while I had it open.
    I did use a pan under it while unwrapped. I put all that juice in when I put it in the foil.

    Now I am hoping it hits the stall. (Really?) If not then it will be done way to too early.

    Looking good! If you wrap you'll generally push through the stall quickly. That said wrap it in foil I'll let it rest 5-10 min then wrap and put it in a dry cooler wrapped in towels they hold well this way.
  5. I definitely gave myself too much time for this packer. I hit 190 at 12 hours. Then wrapped in a towel and put in cooler to rest. Problem is I have 6 hours till the party. How long can I leave it in the cooler? 2 hours of rest and 4 more hours till people show up.
    I was going to start later but a guy I know did one last week and it took him 16 hours. I was afraid people would be here and it would still be on the smoker.
