Day off today so I figured I would try a meatloaf. 2.5 lbs of 80/20 beef, 1 packet liptons onion soup mix, I chopped up about half a med size onion, used the left over chopped garlic from my sauce, some bread crumbs, water, ketchup and mixed good. Topped with some of Jeffs rub and thick sliced bacon. Tossed it on at 2:30 and it was done at 8:30 pulled at 160. I was thinking after 6 hours its gonna be dry... Boy was I wrong, super moist and great taste.. I also tossed on my first stuffed fatty, I put some chedder, smoked mozz cheese and 2 patties of hot sausage. This caom out real good also. I put on some wings and turkey sausage also to make it a full grill. wings with hot sauce Fatty had a cheese blowout I will be smoking more Meatloaf..
