Smoking my 1st set of drumsticks today. I couldn't decide weather or not to skin them. After reading some threads on here about rubbery skin i decided to play it safe & skin'em. After skinning I used the McCormicks Applewood Rub, then into ziplock & refrigerate for a bit. Using apple wood chunks, then basting with A&W BBQ sauce. I picked up the drumstick & wing rack at Menards for $6.00

It looks like a great start.

We don't eat the skin either, but we leave it on to keep the meat moist.

I usually put the rub & butter under the skin then into the smoker.

Thx all. The drumstick turned out great. Almost fall off the bone. Smoked @220° for 2.5 hrs then turned up to 250° for 35 minutes. Basted with A&W BBQ sauce after 2 hrs. The rack worked flawlessly. Wife & kids said its a deffinate keeper.
 
Great looking drummies! Nothing wrong with naked bird parts.

If you want crispy skin you need to high temp smoke, 325+. Or pull a bit early and finish on a hot grill or under the broiler.
 
Good looking drumsticks, sorry I am late to the party. Some time try coating the skinless chicken with mayo then grill/BBQ/ smoke them. Talk about juicy and you can't taste the mayo. Yours are great looking, but some day when ya want something different..... try it. It really surprized me my first try.
