In the woods of upstate new york
I posted about my first brisket and how I am also going to hold it till tomorrow (err tonight). I had a big stall about 2 hrs so my total at 225-250 degrees was 14hrs and 40min. Internal was 189 in 4 places when I took it off. Took the pics and wrapped it up. Now off to bed. Will post about taste tomorrow night. You guys all rock for the help and info. Thank you all so much.
 
I had a feeling, was hoping it wouldn't happen, but thought you might run into a rather long smoke.
Darn briskets, they are so good yet can give you so much grief.
Hope by the time I type this you have already gone to bed after a nice long day of smoking.

Looks great nice job thats the thing with a brisket you usually get the stall and are lucky if ya don't but I believe the stalls make a better piece of meat. Most of the ones I do that stall just seem to taste better. Hope ya get a good nap
 
Now that brisket looks like a thing of beauty for sure. I have to admit that those stalls are a bit of a test of my smoking patience. but it is all well after it is over and you are eating some good Q you just forget all about the stall. Then wait to doit all over again.
