I am so full ...which is a great way for any food forum post to start..lol

Very happy with my product it was a hit, next time I want just a bit less acid in the mop. I used vinegar apple and orange juices, less or no vinegar next time. Otherwise I would not change a thing dry rub was perfect.
 
This was your first brisket? Really? It looks fantastic. Great job. Looks like the young one approves as well

I am doing my first brisket this weekend and am getting excited! I have a question for you. did you pull it at 165 and foil or did you leave it one? looks like you got a nice crispy bark on there...

also that was a full brisket it looks like right? I am just doing the flat portion.
 
I pulled at 190 let rest for 10 min. (photo op) then wrapped and left out for about 4 hrs till girlfriend got up..then fridge till an hour or so before dinner then 250 oven for an hour slice and serve.

I am going to do the same thing for Christmas..will take re-heating over a late dinner for family. Only change less vinegar in my mop. Was a Sam's club whole? brisket I shaved the fat side some ..sorry don't remember the total weight
