I am going to attempt my first brisket flat on Sunday, I have the flat rubbed and chillin in the fridge right now. I know it maybe a little early for that but other plans for tomorrow dictate it happen today. Now on to my question do you suggest smoking the brisket fat side up or fat side down? Thanks for any and all replys.
 
Fat side up!! That flat needs all the help it can get not to be dry and tough!!

Unless your heat source is extremely close to your meat site. Then fat side down for kind of an insulator.
