wow, just wow.
thats a lot of bacon. bellies? buckboard? different flavors? details man, we want details!
I just made 4 lbs of buckboard, going to make 15 more when we run out of my first test batch of buckboard bacon.
Flavors? off the top of my head 1/2 of it is hickory smoked, 1/4 mesquite smoked and 1/4 using Amazen's new chili pepper spice pellets. I haven't cooked any of the chili pepper spice bacon but having it for a late lunch today. I mix up my own dry cure
let us know about how well the pellets imparted any taste to the bacon, i've never tried them and wouldn't mind adding a bit of a new dimension on some of the old standbys.
Just got through cooking/eating the bacon smoked with the chili pepper spice pellets. Best I can describe it has a slight "pep" to it, nothing outrageous, but a different kind of smoke
well, i'll get a small bag of the pellets, definitely worth a try.
That's a lot of bacon,how long do you think it will last you?
