Great looking ribs and butt! Mine always seem to take longer than 9 hours for a smaller butt unless I wrap. May be that I can't get my temp up on my electric. Anyway, looks like a great dinner!

I dont wrap, just cook.

It just depends on the day. My smoker has a mind of its own since it's electric.. usually between 225-275 depending on the weather, etc. I don't like to wrap since I love the bark, but I did it on the last one due to time constraints. I usually like to let it cook through the stall to really break up the fat too. It's been good both ways though.

Oh that sucks.

I used a mes for many years, they just take longer.
