10 racks of ribs for your first time? Man, slow down a bit, lol. That's a lot of meat/money if you mess something up!

3 hours in the smoker, 2 hours wrapped in foil with some apple juice, 1 hour back on the smoker unwrapped again. Should be good to go. Ensure you are measuring the temp on the grates accurately and you shouldn't have any problems if you're set at 225ish!

I did 10 racks this past Sunday, Aug 18.  I Marinated 4 packs of ribs, started on Thursday, out of Marinade Saturday and dried off, sweet rub put on, bagged and left in fridge overnight.  Taken out early, put in front of Air Conditioner to dry out some.  Then into the smoker.  5 -  1/2 racks went into the smoker for the 3 -2 - 1 method about 10 AM.  By the time I had to foil the meat, neighbour takes notice of me and the smoker, then sends girlfriend out for some ribs. About 90 minutes later, she returns, with 4 packs of ribs.   He marinates these for about an hour, with the strangest marinade I have seen, then takes out a Crock Pot BBQ slow cooker, a thing I have never seen before in my life.  He puts 4 - 1/2 racks on it and gives the rest to me put in my smoker, while my ribs are still in foil.  So for the next 90 plus minutes, I had cooked and raw ribs crowded in the smoker. 

So in the end, that smoker was going from about 10 Am to 8 :30 PM, two full smokers full of ribs.  By the time I finished his ribs, he was in bed sleeping.

Long day, to say the least.
