I have heavily used my MES40 for over 2 years now. I also have a very old, very very heavy, Brinkman offset smoker/grill that I used for years. I still use the Brinkman for high heat smokes (Ribeye steaks, wings, pork steaks) but all other smokes are done in my MES40 now.
When I first got the smoker I seasoned it and checked the thermometers. I run a testing lab so I had calibrated thermometers to compare the meat probe and the MES40 temperature gauges too. They were within 1 to 2 degrees of spot-on accurate. Good job Masterbuilt.
When I first started using it, I used the chip feeder. I soaked the chips and also didn't soak them...I ended up using them dry after a spell as I could tell no difference. You have to fill the chip feeder with a few chips (5 or 6) every 20-30 minutes. If you put more chips in than 5 or 6, you will not have thin-blue-smoke (TBS). Then you will have creosote build up and bitter meat. Remember TBS!
However the chip feeder still married me to the electric smoker because it require filling often. So I eventually tried an AMNPS. I never looked back...it was wonderful. I finally had a set-it and forget it smoker. Follow this link

After I got the AMNPS, I started briskets at night and the smoker was still going strong in the morning. I start ribs at lunch hour and they are perfect when I get home for supper. Set the AMNPS for as much or as little TBS time as you want...about 3 hours of smoke per row is what I get.
I have done ribs, turkeys, beer can burgers, fatties, brisket - whole packer and flats, prime ribs (mmmm - my favorite), pork loins, etc., etc.
Another thing - about 6 months ago I gave up using the water pan. I simply wrapped it in foil and stopped using water. I like it better this way. Some fill the water pan with sand and then wrap it in foil so it gets back to temp quicker if you open the door - but if your lookin' you ain't cookin' - so keep the door shut! I just use the element to get it back to temp...it only takes a couple of minutes in the summer....maybe 3 or 4 minutes on the coldest winter day. The MES40 is very tight construction and I thought some smoked meats tasted better with no water pan. Then after while I tried using the water pan again and went right back to no water. Water is not necessary. You set a temp and the water pan maybe makes the element kick on more...which might be needed if you are using wood chips, but if you are using an AMNPS...so not needed.
The meat probe is not water proof - so don't leave it on top of the smoker in a rainstorm. Duh. Very very easy to replace.
Just recently, the control board on the smoker only lets me lower the temp and cook times...but still works fine with the blue tooth.
I hate cleaning the glass and cycle between not cleaning it for months and then cleaning it for months...I think I am staying with not cleaning it now. HOWEVER, it sure is nice to see through the clean glass so you don't have to peek. If you want clean glass, you pretty much have to clean it every smoke.
I called Masterbuilt and told them about the above and they sent me, free of charge, a new control panel and meat probe.
Set it and forget it is finally here if using an AMNPS
Even my mistakes are delicious.
I would definitely replace this smoker with exactly the same model...but if I could get a solid door instead of one with glass, I would do so.
I didn't rate it at 5 stars because the bluetooth software is only OK. The alarms and such are useless.
Pros - Lots of room, easy clean up, LED light is awesome, window

I used this twice over the weekend since receiving it. I enjoyed the space it had to offer, length of power cord, and being able to see the meat.
I dislike the useless Bluetooth connected app. I paired the app to the smoker and when I walked 6-10 feet away it drops connection.
Pros - Very reliable and keeps temperature very well
Cons - Set and forget it ... but that takes some of the adventure away.
Very good product.... I owned a gen 1 and loved it till the electronics started malfunctioning after 2 years. But what really makes me love this product and by the Bluetooth newer version is it's a good smoker but Masterbuilt's customer service is Stellar! :yahoo::yahoo::yahoo:
