Pros - Ease of Use, Does a great job, Best for Fish
Cons - 1 Time Use, Expensive
Actually picked these up on a lark from my local Kroger's Supermarket, when they had them on "Closeout", since they weren't selling.  Took them home, read the instructions, and figured I would smoke some salmon in them.  I've smoked salmon fillets on cedar planks before, and my wife and I adore salmon in this method.  Prepared the fillets same as if I were putting them on the cedar planks, but put them in the smoker bag, and then into the oven they went.  The aroma of cedar wafted thru the kitchen and living while they were cooking, which told me that I was getting a good smoke flavor.  Once timer went off, opened the oven to the strong smell of cedar, but thankfully no smoke.  Opened the bags, and was awarded perfectly flaky salmon fillets, that were moist and flavorful.  I haven't used them since, because, well, I haven't found them on sell anywhere again.  So, planking it is.
