Masterbuilt Cold Smoker Attachment Burns chips too fast

I had that problem too and ended up using chunks. Many of them are too big but you can split them or I have a Band saw so I just sliced them down. The person who originally suggested this tip just used a chisel to split them.  That seemed to work better than chips but it isn't perfect. Try and...

Masterbuilt Cold Smoker Attachment Burns chips too fast

I just used a flexible aluminum dryer hose from Home Depot. It works pretty well. I bought an elbow and an adapter and it fits together nicely the hose slides over the male end of the cold smoker. The adapter fits in the chute of the MES and in the one end of the Elbow. The dryer hose slides...

Masterbuilt Cold Smoker Attachment Burns chips too fast

Thanks for all the information. I actually asked MasterBuilt about the chunks and they said that might work as well so that is the first thing I am going to try. I am a woodworker so I have a Chisel and lots of ways to split it up. I will try warming the meat and also not soaking the wood. It is...

Masterbuilt Cold Smoker Attachment Burns chips too fast

Al  Your answer makes sense and I have noticed a slight bitter flavor especially with the Cold Smoker. So I decided to rig my smoker up pretty much like yours. The only difference is I used a flexible aluminum tube because my setup is not permanent (I have to move it in and out of the garage)...

Masterbuilt Cold Smoker Attachment Burns chips too fast

Thanks Al,  I actually saw your setup when I was looking before I posted. I understand why you do it for cold smoking. Obviously this unit burns hot and given that it is literally attached the the smoker, I would expect it would add heat. The part that I don't understand is the part about the...

Masterbuilt Cold Smoker Attachment Burns chips too fast

I have the Masterbuilt Cold Smoker and am using to hot smoke on a MES 30. Basically I wanted something that doesn't require me to check it every 30 min. I have a AMNPS but don't like the taste of the pellets. The wood chips give result in a much better flavor in my opinion. The Cold Smoker works...

Question about MES Cold Smoker Attachment

I have the MB Cold Smoker attachment for my MES 30 and use it for Hot Smoking. I wanted something where I did not need to feed the chip tray every 30 minutes and it seems to work well. Actually a little too well. If I fill it it with chips, it goes through the entire tube in about 2 hours -- a...

    Turkey thighs for pulled Turkey

Thanks for the reply. I will give it a try. I have tried smoking the chicken and then finishing it off covered and that worked okay but the smoke wasn't quite as strong as I like. I will see how these turkey thighs work and then maybe go back to chicken as I just got the cold smoker for my MES...

    Turkey thighs for pulled Turkey

I found some nice large turkey thighs (3/4#) at my butcher and want to smoke them to make pulled turkey. I have followed the instructions for pulled chicken and it has been excellent but given the small size of the thighs some of the outside meat got a little tough. I tried both skinless and...

    Temperature variaion and Food Volumes

Yes that is logical but why does it just affect the Maverick and not the Control panel? The control panel is just another thermometer. I would expect both to go down when I put in that big old Pork Butt. But only the Maverick responds dramatically with lower temps. That's the puzzling part.

Time and temperature adjustments for smoking lean meats

I have an MES 30 and have had great results smoking pork butts and ribs. Recently I tried Jeff's recipe for Country Spare Ribs and on another occasion tried Jeff's recipe for Braised beef short ribs. In both cases the meat was quite lean (and in beef ribs were boneless). I got both to the temps...

    Temperature variaion and Food Volumes

I am new to smoking and have done about 15 different smokes following Jeff's book and this forum and most have turned out pretty well. I have a MES 30 2nd Generation and a Maverick 733. When I put the Maverick in the empty smoker and set the temp the temperature on the control panel and the...

Smoke Turkey Breast with tough Leathery skin

I am new to smoking. I have a MES and so far am getting very nice results. I am carefully following the instructions and recipes on this forum and in the book. I did my first Turkey breast. It was small -- about 4 1/2 pounds (just my wife and I). I brined it for 14 hours, Put on a commercial rub...
