    Okay will check into those. As mostly the drying of the casings will be done. As for hot smoking plan to use a smoke tube or may even add smoke daddy unit to it. And the cooking process will be steam cooking not so much pork butts or anything like that. Only building this for deer season snacks

    Chiming in as I’m getting a proofer for a built since my other unit failed. Have you been able to control the temp? Any issues with the holdings with it not being insulated? I have a little different burner setup that I would be running however, pretty close to the same.
