    Diners, drive-ins and Dives

I have been to many of them. I would say about 1 out of 10 was better than most. San Diego is a great example. Don’t tell me about “good” Mexican food in San Diego when clearly there is better food all around the area.

    Gas line clogged?

Good afternoon all, I have a Smoke Vault 24 with a natural gas line connected. I normally have a nice firm hiss of gas before a large wooshing flame upon startup. I noticed today my flame was less than steller on high. I had very little gas coming into the smoker judging by the shear hiss of the...

    Swift premium baby back ribs

My thoughts exactly. The 3 pack always has at least one rack I would never pick out.

    Swift premium baby back ribs

I have honestly found costco 3 pack ribs to be lower quality and not a better price then other places.

help with wood for smokin it #2

Just make sure the wood is seasoned. Wood should be set out to air dry for about 6 months. Some people like to use fresh cut wood with a lot of moisture but almost all of us use seasoned wood.

    Beef problems

I am positive I know the answer, but I will ask anyhow. I smoked 4 prime beef ribs I bought at Costco that weighed a pound each. I smoked them for about 4 hours at 225 (I know they were probably done at this point), THEN decided to wrap them for about 45 mins to an hour at 290. After they...

    Hot Sauce + Smoked Protein = ?

I have done the standard rub on meat alone. I normally choose mustard because in my side by side comparison on my ribs, mustard result in a dark colored bark. I was just wondering if anyone had tried hot sauce. My brain was just stirring today. I will try to give it a shot this weekend on a pork...

    Hot Sauce + Smoked Protein = ?

Now for years I have been using mustard, but most use oil, water, and different sauces, to essentially hold the rub on to meat. I know mustard does not change the flavor of whatever I am smoking and doesn't burn due to its low sugar content. My question is if use a hot sauce to hold on a rub...

    Baby backs Wednesday

They look great! Not to sound ignorant, but I have never seen of orange wood smoked before. Similar to apple?
