I am smoking two 13# turkeys on the WSM tomorrow. They are in the brine now. I get to use my new toy, the Cyber-Q wireless controller. I've only used it once so far, for ribs so I haven't used the meat probes yet. I found an App called the BBQ Pit Pal that really gives me great feedback on my...
If anyone is interested in a Traeger pellet smoker check your local Costco. I bought their small one for my son who is buying a townhome and doesn't have a lot of room for a grill for $299. Smoker came with a cover. The sale here ends tomorrow.
This week my Mom said she was probably going to order ribs from a local (highly over-rated) rib place for Father's Day. I said, "What?. Why would I want to eat someone else's ribs." She said she didn't want me to have to "work" on Father's Day. Nope, it ain't work it's all fun. So my parents...
Picked up 6 racks of St. Louis Style spare ribs from Costco (pre-trimmed) to smoke today for family and friends.
Here they are rubbed and ready for the grill:
On the grill, 3 on top, 3 on the bottom.
Three hours in. The lab is Roxy and she is hoping that I drop one.
More to follow.
It is 13.8 pounds. Any idea of the time it will take to cook this? I will be keeping it on the smoker and not moving to crisp the skin. I use a WSM and will probably be on the 230-235 temp range.
I have a question. I just bought a 3 rib Prime Rib (9lbs) to cook on Christmas Eve. Normally we go out to my parents' house on Christmas day and my Mom does a prime rib but my Dad's health has been pretty bad of late and she isn't up to it. My Mom has always cooked it in the oven. I was thinking...
After a couple of times with pork spare ribs on my new WSM I have decided to try some Chicken for the 4th. I have Jeff's book but I do question the pecan and mesquite wood for the smoke. I was thinking cherry and apple. I want to do two whole chickens and some quarters (if I can find them). If I...
My new 22.5 WSM came today, Assembly was a breeze though I think it would be nice if Weber said which washer goes where (figured it out by the fact they give 6 of one and 8 of the other). Tomorrow I plan to burn some charcoal in it. I have heard I need to get it as hot as possible to get rid of...
I am still in the process of selecting my first smoker. I had previously decided on the WSM 18.5" because I didn't expect to be cooking for a lot of people. But last night when talking with my gf she mentioned it would be nice to smoke a turkey come Thanksgiving. I told her that I didn't think...
My name is Dennis and I live in San Diego, CA and work in the aerospace industry (civilian).
I have been interested in smoking for some time. I expect to start with pork ribs and chicken and move on from there. Right now I am considering buying the Weber 18" SM. I don't expect to cook for large...
