I had an extra turkey so I smoked it up today. Cut the breasts off for sandwich meat later in the week, picked the bones mostly clean of the rest and set aside, now I have the carcass simmering slowly to make a smoked stock for some smoked turkey noodle soup tomorrow. I'll update with finished...
Decided to try out my new LEM stuffer. A little inconsistent at first but I am getting the hang of it...so much nicer than using a kitchenaid.

Garlic peppercorn marinade and cooked directly for about an hour and a half until 158F was reached. Set for 20 min and 163F was reached.
Served with the foil pouch garlic, red pepper, and salt asparagus. Side of mashed cauliflower, and a cucumber with tomato salad.
I thought this package at Sams Club was going to be two small 5lb shoulder/butts but it ended up being one large 9.75lber.
Injected with some Coke, generic cajun seasoning, garlic, and ginger.
Then rubbed down with same cajun, garlic powder, ginger, paprika, and brown sugar combo.
